If you have Automatic updates deployment enabled, you will be able to update installed plugins automatically during the upgrade. Just make sure you check for available updates (via the button for it) at the Plugins check screen.

Don't forget to make moodle/config.php (and the rest of the source code) readable by your www server. For maximum security the files should not be writeable by your server. This is especially important on a 'production' server open to the public internet.
If your server uses a main language other than English, you may encounter a 'Fatal error: Maximum execution time of 30 seconds exceeded' when you try to upgrade it. You can increase max_execution_time = 160 on php.ini to allow the scripts enough time to process the language update. Otherwise, you can switch to English as the default language before doing the upgrade and back to your original language after a successful upgrade. See the forum discussion at =119598.
Additionally, when using Scalelite as the Load Balancer for BigBlueButton, make sure the latest version is deployed. With any other Load Balancer, make sure the BigBlueButton service updateRecordings is correctly implemented. Otherwise the migration will not be completed.
Consider putting these documents that need regular updating on a website, instead of in Moodle. Then, at the appropriate place (almost anywhere), link to this document. Doing it this way, the link in Moodle never changes, but whenever you update the document, just move the new copy to your website.
In this method, the question becomes "How do you move these files?". I use Dreamweaver to manage all of my content files. Then I provide theses content files as a link. For example, "Here are the Ch08 Resources." This particular webpage is on my website, but the link is in my Moodle. I make many changes to my content webpages, and it is very easy to command Dreamweaver to "update all files that have changed."
With my method, my Moodle course structure doesn't change much from semester to semester, but the content does change. When I make these changes, I just have Dreamweaver update all the files. Dreamweaver would know that a Word or Excel file has changed too, so it will upload these too. Also, Dreamweaver makes it very easy to apply a consistent theme to content (mine, like this Ch08 webpage are "responsive"), and provides many other features like easy linking and filename management.
Now, the drawback of my method is its advantage, the separation of content from structure. Some folks want everything from a course embedded in the Moodle course. Okay, if so, do it that way. By keeping content separate from the course, my moodledata folder is smaller, so backup is easier. Another obvious drawback is "more education required", something that some instructors don't like.
I use as lot (180) of videos that I need to update as I re-record them. I have set up a webDAV repository within Moodle with the WebDAV residing on the same computer. I then FTP videos to the repository and use the same file names.
If I upload to moodle directly, I really don't know where they are stored, if a replacement in one course replaces them everywhere and if they are being backed up in duplicate with every course that uses them.
Your management of videos mimics my scenario. I too upload them (in my case, via a VPN connection) to a streaming video server. I too might have just as many video as you, and if I put them directly into Moodle, the moodledata directory would grow to be very large. I find that managing these separately is a better solution for me, just like I mentioned about that I find it better to manage content separately.

Moodle 2.0 like most applications has a email services that can email course updates and password resets but one of the ways you can register with Moodle for a course is using email authentication but this must be configured first. This involves a SMTP relay server which Moodle users to send any mail.
Chapter 3 navigates you through the configuration of a send receiver in Exchange 2010 allowing you to use this email service to send all Moodle mail. Once you have it configured in Exchange you can use all the great features in Microsoft Exchange to send emails to different email services such as Office 365 and live@edu.
